This research was conducted to determine the textural characteristics of sausages, made from red tilapia including sagú (Marantha arundinacea) flour as binder or extender material, during the storage process. It raised a design that allowed foran assessmentat O, 2, 6, 10, 15, 22, 27, 31, 45, 58, 100 and 120 days after the preparation of sausages. These were prepared from a paste called surimi and under a technology developed in the laboratory of Meat Technology, National University of Colombia - Palmira. Once developed the sausages are vacuum packed and kept in refrigeraron at 2°C ± 2. Were determined using a Shimadzu Universal Tester texturometer EZT S EZ-est, the parameters of hardness (kgms-2), elasticity (dimensionless), cohesiveness (dimensionless), adhesiveness (kgm²s-2), gumminess (kgms-2) and mastication (kg). For the shear force was used as an adjunct sharp knife. Elasticity cohesiveness and adhesiveness showed no significant difference (α > 0.05) during the time of storage of the sausages, while the elasticity and chewing showed a difference only on day 6 compared with 100. It was concluded that during the time of storage the texture profile parameters and shear force, but had not directly influenced variations in the times of storage of the sausages kept under the conditions listed.</text>

The growth of aquaculture of red tilapia (Oreochromis sp.) in Colombia has allowed the development of food products of higher added value. One of these products are sausages Frankfurt. The aim of this study was to analyze the physicochemical parameters that affect the shelf life of sausages, prepared with addition of sagu starch (Maranthaarundinacea) as a binder or extender material. The raised design allowed evaluation of sausages packed under vacuum and under refrigeration (2 °C ± 2 °C) at 0, 2, 6, 10, 15, 22, 27, 31, 45, 58, 100 and 120 days of storage for physicochemical parameters. The sausages were prepared following the procedure developed at the Laboratory of Meat Technology, National University of Colombia - Palmira from a previously prepared tilapia paste. Determined moisture, protein, fat carbohydrate, ash, energy, value, pH, moisture holding capacity and water activity. The findings suggest that the nutritional and functional value of the sausage is not altered during first 30 days of storage, which are consistent with data reported in the literature, for sausages made from other raw meat.</text>

The rise of the sugar corporations in Guanacaste, 1890-1970 This article reviews the history of Guanacaste sugar mills, mainly with Ingenio Taboga and Azucarera El Viejo, between 1958 and 1970, its founding period. To this end, the origin of cane cultivation is discussed in the Pacific Dry in the late nineteenth century, state interests to find alternatives to coffee, and the powerful public and private interests who considered Tempisque basin as the ideal place to install mechanized agribusiness. Also, with the help of the “Welfare State” of the 1950s and with conspicuous political alliances, the emergence of these companies was forged. To make this work the main reference was based on the theories of Power and archival sources, newspapers and institutional reports were reviewed.</text>

The present work aimed to evaluate the application of plant growth regulators, associate or not to liquid fertilizers, on the ratoon sprouting and productivity of sugarcane genotypes. The experiment was carried out near Jaú city (SP), in a Eutroferric Red Latosol. The experimental design was in randomized complete blocks with factorial treatment structure 5x5, constituted by five genotypes (IAC87-3396, IAC91-2218, IAC91-4216, IAC91-5155 and IACSP93-6006) and five plant growth regulators treatments associated or not to liquid fertilizers (Stimulate®, 0,5L ha-1; Stimulate®, 0,5L ha-1, + Starter N®, 3,0L ha-1; Stimulate®, 0,5L ha-1, + Starter N®, 3,0L ha-1, + Cellerate®, 0,5L ha-1; Ethephon, 3,0L ha-1, and control), with four replicates. The application of the products occurred at 70 days after the fourth crop harvest. The attributes tillering, stalk productivity, sugar productivity, fiber, pol % cane and total sugar recoverable were evaluated. Ethephon provided better tillering, but this response was dependent of the genotype. The highest tiller number caused by Ethephon did not mean the highest productivity. The application of Stimulate® and liquid fertilizers did not provide effects on the sugarcane technological quality. There was increase of cane productivity and sugar productivity with the use of plant growth regulator Stimulate® for all genotypes, with or without supplementation of liquid fertilizer, being an indicative for increasing the sugarcane longevity.</text>
