Las raíces de yuca constituyen la cuarta fuente más importante de calorías para la población humana siendo uno de los pilares de la seguridad alimentaria. Las raíces de yuca no poseen atributos nutricionales adecuados. Aunque existen variedades con valores relativamente altos de estos compuestos, sus valores están lejos de los necesarios para asegurar los requerimientos mínimos de la población humana. Las hojas de yuca poseen valores altos de contenido proteico, minerales y vitaminas, por lo que representan una fuente nutricional alternativa. Sin embargo, el consumo de hojas de yuca en América Latina es escaso o nulo como consecuencia de los altos niveles de cianuro que poseen. En algunos países de África y Asia las hojas se consumen a través de diversas recetas que incluye su cocción, eliminando así una gran cantidad del contenido cianógeno. En esta revisión se presenta un panorama general de la importancia nutricional de la yuca, las diferentes estrategias de mejoramiento genético clásico y no convencional destinados a incrementar los contenidos nutricionales de raíces y la importancia de la explotación de la variabilidad intrínseca de la yuca como una fuente de variedades y genes que puedan contribuir a la implementación de estrategias encaminadas a desarrollar materiales con los requerimientos nutricionales adecuados. Finalmente, se presenta el potencial que tienen las hojas de yuca para ser empleadas dentro de programas complementarios destinados a mejorar la calidad nutricional de la población humana. El cual se caracteriza por poseer un genoma de tipo ssRNA segmentado, lo cual le confiere una alta variabilidad y capacidad recombinante. Esto, sumado al amplio rango de huéspedes susceptibles y la posibilidad de transmisión entre especies, se constituye en un reto tanto para la salud humana como animal. El IAV es capaz de infectar una amplia variedad de huéspedes, incluyendo múltiples especies de aves y mamíferos, tanto domésticos como salvajes y al humano, así como a reptiles y anfibios, entre otros. Dentro de los Alphainfluenzavirus se reconocen 16 subtipos de Hemaglutinina (HA) y 9 de Neuraminidasa (NA), siendo su principal reservorio las aves silvestres acuáticas. Adicionalmente se han reconocido dos nuevos subtipos en murciélagos (H17-18 y N10-11), los cuales se han denominado Influenza-like virus. Teniendo en cuenta lo anterior y conocedores de la riqueza en biodiversidad que posee Colombia, país en el que está demostrada la circulación del virus en cerdos y en humanos y hay resultados preliminares de la presencia de Orthomyxovirus en murciélagos, es imperativo estudiar y conocer los IAV circulantes en el medio, establecer factores de riesgo y analizar el efecto que ha tenido y seguirán teniendo condiciones asociadas al cambio climático, los factores sociodemográficos y el papel de diferentes especies en la ecología de este agente viral. Sin embargo, aún son insuficientes los estudios micoquímicos y se desconoce su relación con las propiedades antioxidantes de bioproductos obtenidos de estas setas durante diferentes estados de crecimiento. En el presente trabajo, se determinó el contenido de proteínas, carbohidratos, azúcares reductores, fenoles totales y flavonoides, así como la actividad antioxidante in vitro(ensayos de captación de radicales DPPH y estimación del poder reductor) de extractos acuosos de Pleurotus ostreatusen dos estados de crecimiento (primordios y cuerpos fructíferos maduros) durante la fermentación sólida. El contenido de proteínas, azúcares reductores y flavonoides fue superior en el extracto acuoso de cuerpos fructíferos maduros, mientras que los carbohidratos y fenoles totales fueron mayores en el extracto de primordios. Los valores de EC50en los ensayos de DPPH y los de poder reductor fueron de 1,72 mg/mL y 3,27 mg/mL para el extracto de primordios y de 0,44 mg/mL y 0,48 mg/mL para el de cuerpos fructíferos maduros, respectivamente. Los resultados sugieren que las propiedades antioxidantes de extractos acuosos de Pleurotus ostreatus(primordios y cuerpos fructíferos maduros) reflejan las variaciones en la concentración de moléculas bioactivas, teniendo en cuenta las particularidades fisiológicas de las fases de crecimiento. Ello podría resultar de utilidad para el diseño de protocolos de obtención de bioproductos de Pleurotus ostreatuscon aplicaciones potenciales como antioxidantes en las industrias alimentaria y farmacéutica.
