The sociological task is to specify the distinctive features of the situation of the youth in family farming, seeking to identify the elements considered in the preparation of their professional projects. Qualitative data were produced by a case study of young farmers who lives in the city of Faxinal do Soturno, a municipality belonging to the fourth colony of Italian immigration in Rio Grande do Sul/Brazil. We performed 36 interviews, consisting of open questions, adopting a semi-structured script, wich were examined by de method of content analysis. Among the results, were observed a context marked by professional projects that breaks with the succession of the family farm work. The negative ratings on agricultural work stand out, particularly on issues related to health, salubrity of work and conditions of aging in rural areas. Family and emotional issues, and also specific aspects of the juvenile condition, marked by the pursuit of autonomy and emancipation, permeate the professional projects in development and show a complex analytical framework, wich amplify the explanatory factors of migration of youth. The focus of this work lies on different influences over the configuration of this productive sector, including cooperativism and its nuances. To support the discussion, we interviewed seven experts and investigated how occurred insertion and changes in dairy farming over the years and how it has contributed to regional development. The analysis shows that, given the demand for expertise and high investment in new production technologies in poultry and swine production, which would be potential exclusion criteria for less capitalized farmers, the dairy farming has enabled many of these to remain in the countryside. On the one hand, institutional, legal and market factors have been pushing on poultry and swine producers and dairy farmers for production technology changes. Neste sentido nota-se a importância de analisar o papel das mulheres frente ao desenvolvimento de atividades pluriativas no campo, pois atualmente percebe-se uma modificação do papel feminino dentro do contexto familiar rural, visto que essas eram percebidas apenas com papel reprodutivo, papel esse que era desempenhado apenas no âmbito doméstico e que se relaciona em síntese aos afazeres domésticos e ao cuidado com os filhos, enquanto que aos homens cabe o papel produtivo por estarem diretamente ligados ao desenvolvimento da agricultura e pecuária, atividades estas que geram renda monetária; mas atualmente esse fato tem sofrido modificações, pois as mulheres rurais estão cada vez mais inseridas no mercado de trabalho por meio do desenvolvimento de atividades pluriativas, sendo assim é gerada renda complementar a família através do trabalho feminino, de forma que a mulher passa a ter além do papel reprodutivo o papel produtivo pelo fato de gerar renda por meio de seu desempenho no desenvolvimento de atividades de cunho não-agrícola. Entendemos que a Cuca (Kuchen) tem posição de elemento emblemático dentro do sistema alimentar que se formou no Médio Vale do Itajaí. Isto porque está frequentemente presente na mesa de seus moradores até os dias atuais, estando relacionada à uma tradição e identidade local. Trata-se também de um importante produto do comércio étnico (ligado diretamente à manutenção da agricultura familiar) e recentemente vem sendo percebida como alimento “típico”, enquantoatrativo do turismo gastronômico local. Este estudo busca preencher a lacuna existente nos estudos relativos à relação entre identidade,alimentação e desenvolvimento entre grupos oriundos de imigrantes no Brasil, especificamente do Médio Vale do Itajaí. Para tanto, partimos do arcabouço da Antropologia da Alimentação e do método etnográfico com oito entrevistas em profundidade, além de pesquisas de campo, para obter informações relevantes ao estudo sobre a Cuca (Kuchen). Observamos que a Cuca (Kuchen) resultou de um sistema alimentar que foi constituído pelos imigrantes teutos na região, tendo se tornado ao longo do tempo um elemento essencial de sua identidade no terrirório e fez parte do desenvolvimento da região, acompanhando suas transformações. ABSTRACT This article presents results of an investigation in the Middle of Itajaí (Santa Catarina state, Brazil), whose objective was to analyze the Cuca (Kuchen) as an emblematic element of the identification of the inhabitants and the relation with the local development. We understand that Cuca (Kuchen) has a position as an emblematic element within the food system in the Middle Itajaí Valley because it is frequently present at the table of its residents, being related to local identity, it is important product of the ethnic trade (directly linked to the maintenance of agriculture familiar) and has recently been perceived as “typical” food, capable of being attractive to local gastronomic tourism. This study seeks to fill the gap in the studies related to the identity and feeding relationship between groups originating from immigrants in Brazil, specifically in the Middle Vale do Itajaí. A inserção dessa atividade em Saf’s representapapel fundamental na diversificação desses agroecossistemas, ampliando as possibilidades de renda e atuando para a soberania alimentar das famílias. Além disso, as abelhas podem contribuir com seu potencial polinizador, aumentando a produtividade de inúmeros cultivos. No entanto, a atividade ainda é poucoutilizada como componente nesse tipo de agroecossistema. A partir dessas informações, este artigo pretende contribuir para a discussão sobre a integração da meliponicultura em Sistemas Agroflorestais, visando estimular o interesse por parte de agricultores familiares, pesquisadores e demais interessados, visto que são práticas condizentes com a conservação da natureza, garantindo o uso racional dos recursos naturais e odesenvolvimento sustentável. Tendo em vista todos os benefícios e que a prática da meliponicultura pode ser considerada uma estratégia para a conservação dos polinizadores, é preciso ampliar a formação de técnicos e pesquisadores, para que sejam elaboradas e planejadas ações com o intuito de prestar assistência técnica qualificada aos agricultores familiares, a fim de difundir e estimular a prática da meliponicultura em SistemasAgroflorestais. = Meliponiculture, the rational breeding of native stingless bees, is an activity that follows the principles of agricultural practices which are economically viable, environmentally sustainable and socially just, such as agroforestry systems (SAFs). The introduction of this activity into agroforestry systems plays a key role in diversifying these agro-ecosystems, expanding income opportunities and working towards foodsovereignty for families. Furthermore, the bees can contribute through their pollination potential, increasing the productivity of many crops. However, the activity is still not widely used as a component of this type of agro-ecosystem. Based on this information, the aim of this article is to contribute to the discussion concerning the integration of meliponiculture into agroforestry systems, with a view to stimulating the interest of family farmers, researchers and other interested parties, as these practices are compatible with conserving nature, ensuring the rational use of natural resources and of sustainable development. Considering all the benefits, and that meliponiculture can be considered a strategy for conserving these pollinators, it becomes necessary to widen the training of technicians and researchers, so that action can be designed and planned which would provide qualified technical assistance to family farmers, and disseminate and encourage the practice of meliponiculture under agroforestry systems.
