                <text>O presente ensaio teórico trata do estudo sobre Turismo e Gastronomia na ótica da preservação e valorização do patrimônio cultural imaterial no âmbito do projeto de extensão Turismo e Gastronomia: unindo sabores e saberes para reflexões. No contexto institucional da Universidade Feevale/RS, as ações de extensão permitem aprofundar as relações de responsabilidade coletiva e de cooperação com a comunidade. O referido projeto tem como objetivo contribuir para a qualificação da gastronomia regional como atrativo turístico-cultural nos municípios de Campo Bom e de Novo Hamburgo, na região do Vale do Rio dos Sinos, identificar pratos regionais representativos das etnias formadoras dos referidos municípios e sensibilizar os empreendedores quanto à necessidade de maior valorização da gastronomia regional. O uso de elementos gastronômicos pelo turismo se faz mais presente em áreas rurais, características dessa região, o que pode proporcionar alternativas de geração de renda às comunidades e aos empreendimentos de agricultura familiar com o surgimento de negócios como a criação de serviços de alimentação, a formação de festas e de rotas gastronômicas. Quanto à metodologia, a pesquisa caracteriza-se pelo método exploratório, tendo como procedimentos técnicos a revisão bibliográfica e a pesquisa participante. Dessa forma, o artigo busca evidenciar a iniciativa do projeto e discutir a qualificação da gastronomia regional como patrimônio cultural imaterial.  Palavras-chave: Turismo. Gastronomia regional.                 <text>La adición de abonos orgánicos es una práctica que mejora las propiedades biológicas del suelo; sin embargo, los efectos de estos sobre las cadenas tróficas (CT) del suelo han sido poco estudiados. El objetivo del trabajo fue determinar el efecto de dos abonos orgánicos comerciales sobre la estructura de las CT asociadas a raíces de plantas de mora (Rubus adenotrichos). La investigación se realizó en dos plantaciones de mora en San Martín de León Cortés y Buena Vista de Pérez Zeledón, San José, Costa Rica, durante agosto-diciembre del 2010. En ambas plantaciones las plantas fueron fertilizadas con compost o lombricompost. Se muestreó el suelo que circundaba las raíces de las plantas para cuantificar los grupos de organismos de las CT, mediante las siguientes técnicas: bacterias y hongos filamentosos mediante cuenta directa en placa, protozoarios mediante el número más probable, esporas de hongos micorrizógenos y nematodos mediante flotación-centrifugación, microartrópodos, macroartrópodos y lombrices fueron cuantificados directamente en el suelo. Los resultados fueron analizados mediante análisis de escalamiento multidimensional. La adición de abonos orgánicos causó un efecto diferencial sobre la estructura de las CT (con respecto a suelos sin fertilizar). Dependiendo del tipo de abono, este efecto varió en cada una de las fincas. Los grupos de organismos mayormente afectados fueron actinomicetes y protozoarios, lo cual implica que la estructura de las CT y como consecuencia, las funciones del suelo no fueron afectadas por la adición de abonos orgánicos.</text>

                <text>A torta de filtro é uma alternativa promissora como matéria prima na complementação dos nutrientes essenciais para o desenvolvimento de mudas de hortaliças. Este trabalho objetivou avaliar o desenvolvimento de mudas de tomate industrial cultivadas em ambiente protegido, aplicando-se diferentes doses de torta de filtro, como biofertilizante, em substrato comercial e solo. Delineamento experimental foi de blocos casualizados com seis tratamentos e sete repetições totalizando 42 parcelas, para cada substrato. Cada unidade experimental consistia de copos com capacidade para 200 mL, nos quais foi incorporada a torta de filtro nas seguintes doses: 0, 2, 4, 6, 8 e 10 Mg ha-1. As variáveis respostas observadas foram: altura de plantas (cm); massa da matéria verde da parte aérea (g); massa seca da parte aérea (g). A utilização da torta de filtro tem efeitos positivos na produção de mudas de tomate industrial. A dose de torta de filtro adicionada ao substrato comercial que proporcionou o melhor desenvolvimento de mudas de tomate industrial é de 6,5 Mg ha-1. Com este ensaio, não foi possível atingir a dose ótima de torta de filtro, a qual representa o melhor desenvolvimento de mudas de tomate industrial, quando cultivado em solo, sugerindo o uso de doses maiores em experimentos posteriores.</text>

                <text>Artisanal mezcal is produced by the natural fermentation of maguey juice, which frequently results in a process that becomes stuck or is sluggish. Using selected indigenous starter inoculums of Saccharomyces and non-Saccharomyces yeasts is considered beneficial in overcoming these problems and thereby preserving the essence of the artisanal process. In this work, three hundred and four yeast isolates were recovered from 17 distilleries and then grouped by the ARDRA analysis, their restriction profiles were clustered in 15 groups. Four of them included 90% of all isolates, and these were identified using the sequence of the D1/D2 domain of the large-subunit rDNA. Pichia kudriavzevii, Pichia manshurica, Saccharomyces cerevisiae, and Kluyveromyces marxianus were detected as predominant species. Both species belonging to the Pichia genus were detected in 88% of the distilleries, followed by S. cerevisiae (70%) and K. marxianus (50%). In order to evaluate the fermentative capacity, one strain of each species was assessed in a pure and mixed culture in two culture media, filtered maguey juice (MJ) and maguey juice including its bagasse (MJB). Findings demonstrated that non-Saccharomyces yeast presented better growth than that of S. cerevisiae. K. marxianus PA16 was more efficient for ethanol production than S. cerevisiae DI14. It produced 32 g/L of ethanol with a yield of 0.47 g/g and efficient of 90%. While, P. kudriavzevii produced more ethyl acetate (280 mg/L) than the others species. All fermentations were characterized by the presence of isobutyl and isoamyl alcohol. The presence of K. marxianus in a mixed culture, improved the ethanol production and volatile compounds increased using co-cultures.</text>

                <text>Being an entrepreneur does not just mean having your own business, entrepreneurship is linked to individual actions and capabilities, that is, having entrepreneurial characteristics is being able to create, modulate and sustain innovative ideas globally. To assist entrepreneurial activities in the agrarian sciences, this work developed a portable application, accessible and usable by academics of agrarian sciences, professionals in related areas and rural producers in order to provide educational guidance in sustainable entrepreneurship, thus becoming a tool directed to entrepreneurial education. The application was developed in the Kotlin language, in the Android Studio 3.4.1 programming environment and Android operating system. The application development process included: (1) selection of the educational content transfer strategy; (2) involvement of users participating in the program; (3) participation of specialized consultants; (4) creation and conversion of content in an Android smartphone application; and (5) usability tests of the prototype version of the application during an extension program. The proposed objective was achieved, as the authors were able to successfully develop a tool for educational support for the teaching of entrepreneurship which is already registered with the National Institute of Industrial Property INPI, number BR 51 2019 002657 8, and is available for use mobile.</text>

                <text>This work aims to analyse the relationship between the curricular proposal of the training course of the Federal University of Fronteira Sul (UFFS) Administration Course, Cerro Largo Campus, and the perspective of rural development perceived by the children of farmers graduated between 2014 and 2016 and graduating students in 2017/2. For this, participative research of qualitative and descriptive nature was chosen. To meet the objective proposed, an interview with a pre-established itinerary was used, with a sample of 18 people, in order to obtain information about the relationship between the curricular proposal of the course and the development of rural property. The application of the survey occurred in the second half of 2017. Among the results obtained, the analysed indexes of greater representativity refer to the workforce used in the property, which is mainly familiar, and the relative importance of the training course of the Administration Course. Finally, it is understood the great benefit that the Administration Course concentrates with the Rural Development and Agroindustrial Management training line, involving extensive discussions about the agricultural and agroindustrial reality, thus helping agricultural and agro-industrial development.</text>

                <text>Family farming holds the promise of adopting agricultural practices and contributing to food and nutritional sovereignty and security. Farmers' health is conditioned by social, economic, technological and organizational factors related to the production and consumption profile, as well as the physical, chemical, biological, mechanical and ergonomic risks present in work processes. The objective is to characterize the health and nutrition profile of rural family farmers in Teresina – Piauí, from the perspective of identifying and preventing possible risks in the group. Methodology: Descriptive and cross-sectional case study conducted in a rural Teresina area. Family farmers of both genders, aged over 20 years, who had been working in the garden for at least four months, participated. For data collection, an interview was conducted, which involved socioeconomic aspects, lifestyle, self-reported health status, food intake assessment and anthropometry. Data were processed in the Spreadsheet Program and presented with descriptive statistics. The study was approved by the Ethics Committee of Uninovafapi (No. 2,534,540). Twenty family farmers participated in the survey. Of these, they were 50% of each sex, most of them perceived to be brown and were aged between 40 and 59 years. As for health conditions, just over half considered their health status from poor to regular and did not practice physical activity; low prevalence of smokers. About working time in the garden, it varied from 01 to 20 years. Most considered the working conditions good/great and all reported being satisfied / very satisfied working in this area. The most prevalent nutritional status among adult farmers was overweight, being higher among men. In the elderly, the higher prevalence was identified in women. The high risk for metabolic and cardiovascular diseases was present in both age groups, being higher among the elderly; The very high risk was identified only in adult women. Regarding food consumption, 95% of farmers consume fresh foods, and 25% consume ultra-processed foods. The survey provided insight into the health and nutrition profile of a small portion of Teresina family farmers. Note at the end that it is a large area, but little studied.</text>

Da energia direta de entrada, 95,3% correspondem a ração e 4,6% a leitões. Da energia de saída, 56,8% se referem a suínos para abate, 30,1% ao biofertilizante e 13% a biogás.Aiming to assess the sustainability of a terminating swine production system, an energy efficiency study was carried out through a 120 days animal lot in a commercial system at Ouro Verde do Oeste, in the State of Paraná, Brazil. The energy rate of each compound involved in the production process and waste treatment using a biodigestor (input and output) was quantified. The matrixes of energy consumption were determined in the form of animal feeding, electrical energy, human labour, equipment, structures, alive swine production, biofertilizer production and biogas. The results indicated that the activity corresponded to an industrial agroecosystem, highly specialized, importing a great part of the energy consumed in the production process and applied to the exportation, with energy efficiency of 0.38 (Joutput/Jinput).                 <text>Pig farming generates significant amounts of biodegradable organic waste that can be stabilised by means of anaerobic bio-digestion, with the nutrients and energy being recycled to add value to the activity. The aim of this study was to analyse the economic and financial viability of setting up a system for the agronomic and energy use of waste from pig farming, generated on a farm in Mamborê, in the State of Paraná. The volume of waste generated by the 4,855 pigs was estimated in order to calculate the value of the biofertiliser and biogas, and obtain the possible revenue. The analyses of economic viability were carried out for the full budget of setting up a biodigestor and motor-generator system and the cost surveys necessary for operation of the bio-integrated project. These costs were compared to revenues in a ten-year cash flow. In order to check the profitability of the project, the following deterministic methods of investment were applied: Net Present Value (NPV) and Internal Rate of Return (IRR). The initial investment was BRL 160,321.43, and the annual operating, maintenance and depreciation costs totalled BRL 77,401.55. Considering the nutrients N, P2O5 and K2O, and the electrical energy, it should be possible to obtain BRL 121,186.63 per year, allowing amortisation of the investment over four years. The NPV and the IRR had a result of BRL 669,959.70 and 25.31% respectively. The results therefore led to the project being followed, revealing socioeconomic and environmental benefits. = A suinocultura gera quantidades significativas de resíduos orgânicos biodegradáveis que, por meio da biodigestão anaeróbia, podem ser estabilizados e ter seus nutrientes e energia reciclados, agregando valor à atividade. Objetivou-se com este trabalho analisar a viabilidade econômico-financeira da implantação de um sistema de aproveitamento agronômico e energético das dejeções suinícolas geradas em uma granja localizada em Mamborê, Paraná. O volume de dejetos gerado pelos 4.855 suínos foi estimado para realizar a valorização do biofertilizante e do biogás, de modo a obter possíveis receitas. As análises de viabilidade econômica foram realizadas mediante um orçamento completo da implantação de um sistema biodigestor/ motor-gerador e levantamentos de custos necessários para o funcionamento do projeto biointegrado. Tais custos foram confrontados com as receitas em um fluxo de caixa elaborado sobre um período de dez anos. A fim de verificar a rentabilidade do projeto, foram aplicados os seguintes métodos determinísticos de investimentos: Valor Presente Líquido (VPL) e Taxa Interna de Retorno (TIR). O investimento inicial foi de R$160.321,43, e os custos de operação, manutenção e depreciação anuais totalizam juntos R$77.401,55. Considerando os nutrientes N, P2O5, K2O e a energia elétrica, seria possível a obtenção de R$ 121.186,63 por ano, permitindo a amortização dos investimentos em quatro anos. O VPL e a TIR resultaram em R$ 669.959,70 e 25,31%, respectivamente. Dessa forma, os resultados convergiram à adesão do projeto, revelando benefícios socioeconômicos e ambientais.</text>

                <text>Entre os mecanismos de planejamento à disposição do Poder Público e passíveis de serem utilizados no planejamento territorial está o Zoneamento Ecológico-Econômico – ZEE –, que busca a compatibilização entre o desenvolvimento econômico e a qualidade ambiental. O objetivo deste trabalho é determinar zonas para promoção ou implantação de cultivo de alimentos orgânicos no município de Arroio do Meio/RS. O estudo desenvolveu duas propostas com o objetivo de reconhecer as características ambientais e territoriais do município e a vocação das diferentes áreas no que tange à ocupação antrópica e à conservação ambiental: 1) ZEE com a indicação dos usos e ações recomendados para a utilização racional do território; 2) rotinas de apoio à decisão para a determinação da aptidão. Os resultados das duas avaliações apontaram que o município apresenta aproximadamente 40% de sua área enquadrada como zona de uso intensivo, apresentando aptidão para a promoção da produção de alimentos orgânicos.Abstract Among the planning mechanisms available to the Government that could be used in territorial planning is the ecological-economic zoning - EEZ, which seeks forreconcilement between economic development and environmental quality. The aim of this study is to determine areas for the introduction and development of organic foods cultivation in the municipality of Arroio do Meio/RS/BR. The study has developed two proposals in order to recognize the territorial and environmental characteristics of the municipality and the vocation of different areas regarding anthropogenic occupation and environmental conservation: 1) EEZ indicating the uses and actions recommended for the rational use of the territory, 2) decision support routines for the determination of aptitude. The results of both evaluations pointed out that the city has approximately 40% of the framed area as a zone of intensive use,showing ability to promote organic foods production.</text>
