Por este motivo, desde 2008, las frutas y hortalizas frescas son consideradas por muchos organismos internacionales como un alimento de riesgo. Uno de los principales problemas microbiológicos de las hortalizas de hojas son las bacte­rias entéricas que pueden adherirse rápidamente al tejido durante el cultivo, coexistir con las bacterias epífitas y persistir por largos periodos de tiempo. La prevalencia de microorganismos patógenos en las frutas y hortalizas es baja ( < 1%) y la cuantificación de las bac­terias patógenas o de microorganismos indicadores generalmente muestra niveles muy bajos, lo que no justificaría el elevado número de alertas microbiológicas asociadas a este tipo de productos. Sin embargo, existen dudas sobre si los recuentos obtenidos utilizan­do las técnicas convencionales son capaces de reflejar realmente todos los microorganismos presentes en el producto vegetal, así como en el agua de riego y en el suelo. Varios estudios han demos­trado que cuando las bacterias son sometidas a distintos factores de estrés entran en un estado temporal de baja actividad metabóli­ca en el cual las células pueden persistir durante largos periodos de tiempo sin división celular, llamado estado de latencia o viable pero no cultivable (VBNC). Among the initiatives that have been implemented, agrosilvopastoral systems are a viable strategy with regard to extensive livestock. Objective: We characterize the historical trajectory as well as technical and socioeconomic indicators of cattle raising using extensive and agrosilvopastoral practices in the municipality of Pijijiapan, Chiapas, Mexico.  Methodology: Information was obtained through in-depth interviews with key informants, documentary review, semi-structured interviews, and direct observation in 35 livestock production units (LPU). Qualitative information was organized chronologically and presented in a descriptive, narrative manner. Quantitative data were analyzed using a K-means cluster analysis according to a Livestock Agroecosystem Services Index (ISAGAN according to its Spanish initials) of the LPU. Information was examined using analysis of variance and a non-parametric Kruskal-Wallis test in order to identify differences among clusters. Results: Three important stages were identified in the historical trajectory:  i) a colonial, pre-livestock raising period with little anthropic intervention, prior to 1900; ii) a period of productive development of livestock raising, from 1900 to 1955, and iii) a period of expansion of extensive livestock raising, beginning in 1955, with significant environmental impacts. More recently, agrosilvopastoral management has been presented as a sustainable alternative to extensive livestock raising. Implications: Livestock raising based on grazing is characterized by a tree gradient, a low level of technological development, low use of external inputs, and holistic diversified resource use.  Conclusion: Of 26 technical and socioeconomic indicators evaluated, technical advisory was the only one which varied (p< 0.05) among clusters; upon increasing the values of this indicator, ISAGAN also increased. Rodents were trapped from May to September 2016 in rural households in the communities Xkalakdzonot (XKA) and Paraíso (PAR). A total of 236 M. musculus and 127 R. rattus were trapped over 3880 trap-nights. In XKA, R. rattus was more abundant than M. musculus, whereas in PAR, M. musculus was notably dominant over R. rattus. The sex ratio was 1:1 in both rodent species. Rattus rattus in classes 40.1–80 g and 120–139 mm were more abundant, whereas M. musculus in classes 8.1–12 g and 70–79 mm were more abundant. Mus musculus had similar weight, body length and reproductive and health parameters between communities. The majority of specimens of trapped rodents had a good body condition and few individuals had wounds. The information generated in this study is basic for understanding the ecology of commensal rodents, the dynamics of rodent-associated zoonosis transmission, and to design of integrated control programs for rodents. Este proceso debe estimular la formación de sociedades justas y ecológicamente equilibradas, que conserven entre sí una relación de interdependencia y diversidad. Esto requiere de responsabilidad individual y colectiva a nivel local, nacional e internacional. Este artículo analiza los esfuerzos realizados a nivel mundial y nacional para avanzar desde la educación ambiental hacia la educación para el desarrollo sostenible, con énfasis en la educación universitaria, para cerrar con la descripción de algunos de los esfuerzos realizados por la Universidad Simón Bolívar.
