La actividad enzimática fue determinada espectrofotométricamente. La actividad celulolítica presentó sus máximos valores en los días de la cosecha del hongo comestible, la actividad manganeso peroxidásica presentó sus máximos valores en el período de desarrollo del micelio. La cepa de Pleurotus ostreatus 2171 presentó mayor actividad enzimática. The aim of this project was to determine the time of maximum enzymatic activity generation of cellulase, manganese peroxidase and lignin peroxidase in extracts obtained from corn straw fermentation with two strains of the edible mushroom Pleurotus ostreatus 404 and 2171. Enzyme activities were determined spectrophotometrically. The highest enzyme activity, obtained for the two strains of fungi, was cellulolytic activity, followed by manganese peroxidase activity. Lignin peroxidase activity was not detected. Cellulolytic activity had its maximum values in the days of the edible mushroom harvest. Manganese peroxidase activity showed the highest values during mycelial period. Pleurotus ostreatus strain 2171 showed higher enzymes activities.
