Catuai Amarillo es una organización ubicada en Chocamán, Veracruz, constituida en 1990.  En los 30 años de desarrollo organizacional se identifican tres etapas. En la primera se avanza hacia el valor agregado, de “cereceros” se transforman en “pergamineros”; la segunda se caracteriza por la diferenciación del producto mediante la certificación orgánica y el comercio justo para la exportación de café verde a Estados Unidos y Europa; y la tercera la búsqueda de cafés especiales con mayor participación en el mercado nacional con café tostado y molido. Otras acciones importantes son diversificación productiva, alianzas estratégicas y relevo generacional.  A pesar de los logros, aún persisten importantes desafíos.
